@guest_1303952 good question - so instacart actually used to claw back the coupon if your total dropped below the limit due to items out of stock, but that's recently changed. So I just did an order for $165 and the shopper only found $140 of the items, so my total was $90 plus fees because the $50 off was still credited to the order.
That's my experience too. The shopper has never found everything; the discount has always applied even if the final tally is less than the required minimum order.
The Fine Print is pretty important here. No groceries.
