Southwest periodically make flights for further in the future available. They’ve added flights until April 24th, 2017 (previously the schedule was only extended until March 8th).
Southwest has a pretty good cancellation/refunds policy, depending on the fare you’ve booked you’ll either receive a points refund (Wanna Get Away) or cash refund (Business Select or Anytime – returned to credit card if you used one). That means it’s often best to book flights as soon as they become available and periodically check to see if the price has decreased, if it has you can cancel and rebook.

You don’t have to “cancel and rebook.” There’s a button for “Change Flight;” you just change the flight to the same flight at the reduced price, and the credit is automatic and nearly instantaneous.
Points refund is only for a points redemption. Wanna Get Away fare refund option is credit towards a future flight within 1 year, must be same passenger. Cash refund for Business Select or Anytime fares.
