Is South Africa safe to visit?

Yes. Obviously it depends where you go, as does NY, but I had an amazing time there.

Fares to Amsterdam are pretty stellar; 30k from SEA, MSP, BOS, JFK and IAD

I’m not familiar with Delta award flights but would you be able to purchase one of these award fares and upgrade to business. Is that possible or even worth it?

Edit: meant upgrade with points.

You can upgrade them for cash, but I’m not sure if you can upgrade them for points if that’s what you were asking.

Not sure if it’s worth it or not. It can be pretty expensive depending on the flight.

Alex yes, I just wasn’t sure if it’s something people generally recommend against. I’m currently amassing a lot of MR points with nothing in mind to use them on. Might just get the Schwab Plat and cash them out next year.
